Quick Green Pulao


Ingredients

  • 1 cup basmati rice
  • 1 cup vegetable (french beans, carrot, cauliflower, potato, pea,
  • 1 onion finely chopped

For green paste

  • 1/4 cup coriander leaves
  • 2 tsp mint leaves
  • 1 inch long ginger
  • 4-5 garlic
  • 3 green chilies
  • Whole garam masala
  • 1 Star anise
  • 1/2 tsp jeera(cumin)
  • 1 bay leaf
  • 3 cloves
  • 4 black pepper
  • 1 inch cinnamon stick
  • 1/4 tsp turmeric powder
  • 2 tsp oil or ghee

Steps

  1. Wash and soak the rice in enough water for atleast 1/2hr.
  2. For chutney take a grinder jar add coriander leaves mint leaves ginger garlic green chilies add 2 tbs water grind it to a fine paste, keep it aside.

  3. Take a cooker add oil or ghee add jeera, whole garam masala, saute them on medium flame for 1/2min.
  4. Now add finely chopped onion saute it till it become pink in colo, now add veggies, you can choose veggies according to your choice.
  5. Add salt and mix it well, now add green chutney paste mix it well and cook it for 1 min.
  6. Now add soaked basmati rice, and turmeric powder, saute gently for 1 to 2 minutes.
  7. Pour 2 cup of water mix well check the salt.
  8. Cover and pressure cook the vegetable pulao for 2 to 3 whistles on a high flame. Pressure cooking for 2 whistles will give you an al dente texture. For a softer texture pressure cook vegetable pulao for 3 whistles.when the pressure settles down on it's own, remove the lid and gently fluff the rice.serve the pulao with curd pickle and salad.
