Mango Thecha Open Sandwich Recipe

Ingredients:

For Mango Thecha:

  • 2 ripe mangoes, peeled and diced
  • 4-5 green chilies
  • 1/4 cup coriander stems
  • 4-5 garlic cloves
  • 1 tsp oil
  • 1 tsp cumin seeds (jeera)
  • 2 TBS sesame seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • Salt to taste

For Sautéed Veggies:  

  • 200 gm Paneer Cubes
  • 1 Medium size Capsicum cut into Dices
  • 1 Big size Onion cut into cubes
  • 1Tbs Butter 
4  SourDough Bread Slices
 Garnishing - Hungcurd Dip

Instructions:

  1. Preparing the Mango Thecha:

    • In a mortar and pestle, pound the green chilies and coriander stems to make a coarse paste.
    • Separately, pound the garlic and ripe mangoes to make another coarse paste.
    • Heat 1 tsp oil in a pan and add 1 tsp cumin seeds and 2tbs  sesame seeds. Let them crackle.
    • Add the green chili and coriander stem paste to the pan. Sauté for a few minutes until the raw aroma fades.
    • Add the garlic and mango paste. Cook until the raw flavors of garlic are gone.
    • Add 1 tsp coriander powder, 1 tsp red chili powder, and salt to taste. Cook until the mixture forms a nice thick paste.
    • Set aside to cool.
  2. Preparing the Sautéed Veggies:

    • In a pan, heat 1 tbsp butter.
    • Add the paneer cubes, onion cubes, and capsicum cubes. Sauté until they start to soften and get a slight char.
    • Add 1 tsp red chili powder and salt to taste. Mix well and cook for another minute. Set aside.
  3. Assembling the Sandwich:

    • Toast the sourdough bread slices until they are golden brown and crispy.
    • Spread a generous amount of mango thecha on each slice of toasted sourdough bread.
    • Top with the sautéed vegetables.
    • Garnish with a dollop of hung curd dip on each slice.
    • Serve immediately.
